Cheesy Chicken Veggie Casserole

  • 2-3 cooked chicken breasts, shredded (or cubed) and seasoned 1 (10.5 oz) can of Campbell’s cream of chicken with herbs
  • 1 (12 oz) bag of frozen mixed veggies
  • 1/2 cup of white rice 
  •  1 (8 oz) bag of cheddar cheese
  • 2 Tablespoons of butter 
  •  salt and pepper to taste
  • garlic to taste
  1. Cook the chicken any way you want (grill, boil, roast…). 
  2. Boil water and cook the rice. (I would recommend rinsing the rice several times and adding 1 Tablespoon butter to the water). 
  3. Preheat the oven to 350℉. 
  4. Shred or chop cooked chicken. 
  5. Steam the bag of veggies
  6. Throw all the ingredients together in a large bowl and mix thoroughly. 
  7. Grease the casserole dish and then put the contents of the bowl into the casserole pan. 
  8. Bake the casserole in the oven for 10-15 minutes (until cheese is clearly melted).
