
- 1 quart of chicken broth
- 3 cloves of minced garlic
- 1 head of cauliflower (finely chopped)
- 3 Tablespoons curry powder
- a little bit of salt and pepper
- 1/4 cup flour
- 1/2 cup milk
- 2 cups shredded sharp cheddar cheese
- 2 chicken breasts, cooked and shredded
Combine the chicken broth, the garlic, cauliflower and any other vegetables you choose to add (I have added mushrooms, onions, peas, carrots…the possibilities are endless!). Bring to a boil then simmer. Add the curry powder, bouillon, salt and pepper.
Whisk together the milk and flour until smooth. Add it to the soup and stir constantly until it thickens. Add the cheddar cheese and stir until it is completely melted.
Stir in the shredded chicken and simmer.
