Banana Bread

1 1/4 cups sugarIMG_5316
1/2 cup softened butter
2 eggs
4 medium overripe bananas, mashed
1/2 cup skim milk
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
(you can add 1 cup of chocolate chips if you’d like…)

Preheat oven to 350°. Spray the bottoms of 2 loaf pans with olive oil (I use ceramic bread pans for the best turnout). Mix the sugar and the softened butter until they are thoroughly blended. Stir in the eggs. Add the mashed bananas, milk and vanilla and mix together. Stir in the baking soda then the flour, one cup at a time, until the batter is combined evenly. If you’re adding the chocolate chips, now’s your chance. Fold them into the batter. Pour half the batter into each pan and bake for one hour. You can do the toothpick test if you’d like, but you’ll smell the bread when it’s perfectly done. Give the bread at least 5-10 minutes to cool off before diving in.
