

Ingredients:
- 6 medium potatoes
- 1 cup diced or thinly sliced yellow onions
- 4 T butter
- 4 T flour
- 2 t salt
- 2 1/2 cups milk
- 1 1/2 cups grated cheddar cheese
Instructions:
Peel the potatoes and slice very thinly (the thinner you slice them the better). Using a saute pan, make a cream sauce on the stove with the butter, flour, salt and milk. When the sauce has thickened, remove the pan from the heat and add the grated cheese.
Spray a casserole dish with cooking spray and line the bottom with a layer of sliced potatoes. Sprinkle the onions on top of the potatoes and then add 1/3 of the cheese sauce evenly over the top. Make a second, then a third layer, ending with the last 1/3 of the sauce.
Bake uncovered in a 350 degree oven for 60-90 minutes, until the top has crisped and it fills your house with the delicious smell of cheese and potatoes.
