Pancakes for 2

1 cup flour
3/4 cup milk
1 Tablespoon sugar
2 Tablespoons canola oil
1 1/2 teaspoons baking powder
1 teaspoon vanilla
butter for the griddle
customize with your choice: berries, bananas, apples, peaches, pears, chocolate chips, syrup, honey, jam, granola, chopped nuts or powdered sugar

Beat the egg in a medium bowl. When it is fluffy, beat in the remaining ingredients (except the butter). Beat it only until it is smooth…any longer will make your pancakes too dense. For thinner pancakes, add a couple extra tablespoons of milk. Heat the griddle to medium (or 375 degrees).

For each pancake, pour 1/4 cup of batter onto the griddle. Cook the pancakes until they are puffed and dry around the edges. Flip them and cook the other side until it’s golden brown. Makes about 6-8 small pancakes.
